Description
This particular flavor was inspired by the classic pairing of dill and lemon, but we chose sumac over citrus for its bright acidity, lemon-like familiarity, and stunning purple hues. And what is sumac, you might ask? It’s not super common in the US, but if you’ve ever wondered what that purple spice on top of hummus is, that’s sumac. Sumac appears in all kinds of global cuisines, and in ancient times sumac was used to add acidity to dressing and hints of tang and citrus to fish.
We think this product makes a great uncommon addition to our classic smoked salmon varieties, and it’s perfect for tinned seafood lovers looking for a unique but mild and affordable whitefish, lightly flavored with a delicious spice blend.
Tasting notes:
Dubbed by one taste tester as “budget-friendly crab!” you’ll find that the pleasant mellow taste of Alaska rockfish is elevated, not overpowered, by the complementary flavors of sumac and dill.
Serve it up: Rockfish is a delicate fish and flakes easily. For this reason, we recommend enjoying it directly from the tin very simply with some nice crackers like the Hayden Flour Mills White Sonora or Farro crackers in our Pantry. You could also make a simple paste by mixing cream cheese, butter, a dash of onion powder, and, if you wish, a bit more fresh dill. A lovely medley of olives like Meditteranean Za’atar Olives from trusty supermarket brand Mezzetta would complete the vibe. A riff on the theme with a Sumac Martini or try Sparkling Sumac Lemonade for a bright, bubbly, alcohol-free beverage pairing.

About the Brand: Wildfish Cannery
Nature provides perfection—we’re here to preserve it.
For over 30 years we've been carrying on the craft and time-honored traditions of the region in the small seaside town of Klawock, home to Alaska’s very first salmon cannery more than a century ago. Klawock, located on Prince of Wales Island in Southeast Alaska, has a population of just 796, most of whom consider fishing an essential part of life.
Wildfish was founded in 1987 by Phyllis Meuller, the local school bookkeeper who saw the community's need for custom seafood processing. Today, the reigns are held by Phyllis's grandson, Chef Mathew Scaletta, who is dedicated to melding his fine-dining background (honed in foodie paradise Portland, Oregon) with his family’s craft. So three generations in and we're still here, taking the best of our traditions and adding a "new school" touch. The exploration and excellence never stop.
